Sugar 7 ounces

How to make Koloocheh Fooman(Fuman Cookies)?

Instructions:

Step 1: Preparing the dough

In a small bowl, combine the lukewarm milk, sugar, and yeast. Mix well and let it sit until the yeast activates and becomes foamy.

In a separate large container, sift the flour with the salt. Add the melted butter and egg yolk to the flour. Pour in your activated yeast mixture and knead until a smooth, consistent dough forms.

Cover the bowl and set it aside in a warm place to rise until it doubles in volume.

Step 2: Preparing the filling

While the dough is rising, prepare the filling. In a medium bowl, combine the ground walnuts, sugar, melted butter, cinnamon, vanilla, and cardamom. Mix thoroughly until the texture is uniform. Set this mixture aside for later.

Step 3: Dividing the dough

Once the dough has doubled in size, turn it out onto a lightly floured surface. Knead it briefly, then divide the dough into equal-sized portions. Keeping the portions uniform helps ensure all your cookies bake evenly.

Step 4: Shaping the cookies

Take a portion of the dough and flatten it in your palm. Place a spoonful of the walnut filling in the center, then fold the edges of the dough over to seal the filling inside.
