Sambooseh – Persian Samosas Recipe in 30 min

Persian Sambooseh is a very quick, delicious, and slightly spicy dish. The city of Abadan in the south of Iran is the origin of this food.

Samosas is a very famous street food that was taken from India and is also sold on the streets of Iran and Pakistan.

This dish combines boiled potatoes with vegetables and onions, mixed with different spices, wrapped in lavash bread or special dough, and fried in oil.

It is prepared in different ways in different countries of Asia and India, and finally, it is served with different ketchup sauces or local spicy sauces.

Ingredients

olive oil as needed
Lavash bread 2 pcs
Purple or yellow onion 1 pc
Potatoes 2 large ones
Turmeric 1 cup
Sweet paprika 1 teaspoon
Red pepper: The tip of a teaspoon
Black pepper and salt as needed
Parsley leaves and fresh coriander as needed

Step-by-Step Persian Samosa Recipe

1. To prepare samosas, I first put the potatoes in a pot and add water to bring them to a slow boil.

2. Then, I chop an onion into small, and precious sizes. Then I fry the onions in oil and add turmeric, paprika, black pepper, and salt.

As the onions are slowly fried with spices, I fry the remaining potatoes in another pan.

If you want to cook potatoes faster and with less oil, you can fry them in an air fryer without or with very little oil.

3. I mix the fried potatoes with onions and keep them aside.

4. At this stage, I clean and chop parsley and coriander. I chop them like in the picture, take the desired amount, and pour it into the onion and fried potato mixture.

5. At this stage, I mash the boiled potatoes and mix them with olive oil, salt, black pepper, and the rest of the parsley and coriander. I will mix it completely.

6. After making the inner mixture of the samosa, we will start cutting the lavash bread. We cut the lavash bread into uniform and regular rectangles.

We put the Persian samosa mixture inside the bread. Then, we wrap the lavash bread in a very simple and regular shape.

7. Then pour the oil into the frying pan, allow it to heat up completely, and slowly put the Iran samosa in the liquid oil until they are completely fried.

This Iranian fast food should not be fried too much, and when they are golden brown, they are ready, and you can eat them. 

Topping and Serving Samosa Persian :

Usually, Persian samosas are served with hot or regular ketchup sauce. They also use a variety of carbonated drinks.

In the south of Iran, in Abadan, spicy mango sauce and Iranian pickles, such as lite pickles, are also served with this dish.

In India, Indian chutney sauce is also used with this delicious sandwich.

Notes:

No Tip
1 Add red hot sauce to the ingredients at the end to make the samosa more delicious.
2 You can also use a little sausage or fried marinated minced meat in the ingredients.
3 If you want to prepare your samosa with minced meat, add it while roasting the onions and wait until the meat is cooked.
4 Do not mash the potatoes when hot so they do not become mushy.
5 If the lavash bread is dry, add a little water to moisten it so it does not crumble.
6 If lavash bread is unavailable, use yu-fka dough.
7 Samosas are my favorite Iranian fast foods, along with Bandari sandwich, Persian Pirashki, and Persian Pizza.

How to prepare Sambooseh without oil

You can use the oven to cook a healthier and lower-calorie samosa. Follow all the steps as before, apply a little oil to the samosas with a brush, and put them in the oven for 15-20 minutes at 195 degrees Celsius.

With this method, you can prepare almost military and very tasty samosas.

 How to make Persian Samosa dough at home

  • First, put the dough liquid in a small container with half a glass of lukewarm water until it foams and is ready.
  • In another container, mix flour and salt well and sift.
  • Gradually mix the dough with flour and salt.
  • Add the oil to the flour mixture.
  • Knead the Persian Samosa dough with your hands.
  • Divide the samosa dough into small and equal pieces.
  • Ball the pieces of dough and cover the dough for 60 minutes until it rises or increases in volume.
  • After forming the dough, roll the balls with a 3 mm-diameter rolling pin.
  • Put the prepared Iranian appetizer ingredients inside the opened dough and wrap the dough.
  • Fry the wrapped samosas in oil.
