Originating from the lush Gilan and Mazandaran provinces along the Caspian Sea, Kabab Torsh (‘Sour Kebab’) is a signature Iranian BBQ dish. Unlike standard marinades, this recipe coats tender cuts of beef or lamb in a rich paste of crushed walnuts, concentrated pomegranate molasses, garlic, and fresh aromatic herbs before grilling over charcoal.

Ingredients:

Beef Tenderloin or Sirloin (or Lamb): 700g (1.5 lbs), cut into 1.5-inch cubes
Yellow Onion 1 medium, finely grated (excess juice drained)
Pomegranate Molasses (Paste) 3 tablespoons (adjust sourness to taste)
Walnuts 100g (approx. 1 cup), finely ground
Vegetables (parsley, tarragon, coriander, savory, chochag) in the necessary amount
Garlic 2 cloves, finely minced

Instruction:

Step 1: Prepare the Meat

Trim any excess fat from the beef tenderloin and slice it into uniform 1.5-inch (bite-sized) cubes. Place the meat in a large glass or ceramic bowl.

Step 2: Make the Walnut-Pomegranate Marinade

In a food processor or bowl, combine the finely grated onion, minced garlic, ground walnuts, chopped herbs, black pepper, and pomegranate molasses. Pulse or mix until it turns into a thick, uniform paste.

Step 3: Marinate the Meat

Coat the meat thoroughly with the marinade paste. Cover the bowl with plastic wrap and refrigerate for at least 4 hours (ideally 12–24 hours for maximum tenderness and flavor depth).
