Homemade Persian Doogh | Easy Savory Yogurt Drink

Persian Doogh (pronounced doog) is a refreshing, savory, and fizzy Iranian yogurt drink. While most cultures mix yogurt with fruit or sugar, the traditional Persian recipe combines full-fat yogurt with water, salt, and aromatic dried herbs like mint and rose petals.

This traditional beverage is a staple on Iranian dinner tables and is commonly served alongside rich, meat-heavy dishes like Kabab Koobideh or Ghormeh Sabzi to aid digestion. Below is the step-by-step method to prepare both a quick, fresh Doogh and the traditional fermented, carbonated version at home.

Instruction:

1. Whisk the Yogurt:

2. Add Water and Seasoning:

Slowly add the water to the yogurt while stirring continuously to mix it well. Then, add salt and dried mint. Stir again until everything is well combined.

3. Make it Fizzy (Fermentation Method):

At this stage, your Doogh is ready to drink as a “fresh” version. However, if you want authentic Carbonated Doogh (Fizzy), pour the mixture into a sturdy bottle with a tight cap. Leave the bottle at room temperature for 2 to 3 days (not in direct sunlight). The natural fermentation will make it sourer and carbonated.

4. Serve:

Shake the bottle gently before opening (be careful, as pressure may build up!). Serve chilled with plenty of ice. You can garnish it with fresh mint leaves or rose petals.

  • To make a carbonated one, first, we mix a glass of milk and a glass of lukewarm water; then, we mix a glass of yogurt with some salt separately. Now, we mix all the ingredients and put them in a bottle.
  • To make carbonated drinks, we must put the bottle in a warm place for a week. After a week, our amazing drink becomes gassy and sour. Now, we can add flavorings such as mint, shallot, or any other flavoring to it.

  1. In my opinion, the best drink after water is doogh or buttermilk, of course, it should be made with less salt and with fresh yogurt and dry mint inside, which is great.
    Instead of nooshabeh, my mother always made Persian doogh for us, and this made our ossification strong since childhood.
