The “Secret” Remedy: Iranian Date Walnut and Ginger Drink

Here is the value-added secret that many other recipes miss.

While standard Date Milk is delicious, the specific combination of Iranian date, walnut, and ginger is a powerful formulation in traditional Persian Medicine (known as Teb-be Sonnati).

Why this specific mix?

Milk has a “cold” nature (in traditional terms), which can sometimes cause bloating or lethargy in some people. By adding Dates (Warm), Walnuts (Warm), and Ginger (Hot/Dry), we create a perfectly balanced “Temperate” drink.

  • The Exact Formula: To achieve this balance, for every 1 cup of milk, you must use 5 dates, 2 whole walnuts, and exactly a thumb-sized piece (3-5g) of fresh ginger.

  • The Benefit: This specific trio drastically reduces inflammation, cures morning sluggishness, and acts as a potent shield against colds and flu during winter.

Iranian Energy Drink Ingredient:

For the most consistent flavor, I have provided measurements in both Metric and Imperial units. This recipe serves 2 people.

Ingredient Metric Imperial (Approx) Chef’s Notes
Milk (Low-fat or Plant-based) 360 ml 12.7 fl oz (0.8 lb) Soy or Almond milk works great for vegans.
Dates (Rotab or Mazafati) 100 g (10 pcs) 3.5 oz (0.22 lb) Soft dates yield the creamiest texture.
Walnut Kernels 50 g 1.7 oz (0.11 lb) Essential for “brain food” and texture.
Fresh Ginger 5 g 0.17 oz The secret “kicker” for immunity.
Cinnamon & Cardamom 3 g 0.5 tsp For that authentic Persian aroma.

Shir Khorma Recipe Method 1: The Modern Creamy Blend (Fastest)

Persian date walnut ginger drink is best for: Persian Breakfast on the go or Post-workout.

  1. Prep the Dates: Remove the pits from the dates. If you are fussy about texture, you can peel the skins, but I recommend keeping them for the fiber. Chef’s Tip: If your dates are dry (like Zahedi dates), soak them in warm milk for 20 minutes first.

  2. Combine: Place the dates, milk, walnuts, and spices (ginger, cinnamon, cardamom) into a high-speed blender.

  3. The “Barista” Blend: Blend on high speed for 3 full minutes. This long blend time ensures the walnut oils emulsify with the milk, creating a latte-like foam.

  4. Serve: Pour into tall glasses and garnish with crushed pistachios.

  5. Shir Khorma is a staple of Iranian juice bars and an essential part of the local street culture. When exploring the bustling night streets, a classic evening for many Iranians involves enjoying a nostalgic Persian pizza at a corner fast-food shop, followed by a chilled, refreshing glass of date milk to balance the savory flavors.

Persian Date Milk Recipe Method 2: The “Grandma Style” (No Blender Needed)

Best for: A rustic, chewable texture or when you want a hot nightcap.

Many people ask me, “Chef, what if I don’t have a blender?” The traditional way is actually quite charming:

  1. Soak and Soften: Place your pitted dates in a small bowl and add 30ml (2 tbsp) of boiling water. Let them sit for 5 minutes.

  2. The Mash: Using a fork, mash the dates vigorously until they turn into a smooth, sweet paste. This is easier if you use soft dates like Mazafati or Kabkab.

  3. Whisk: Heat your milk in a saucepan. Add the date paste to the hot milk and whisk manually until dissolved.

  4. Add Crunch: Finely chop the walnuts (do not powder them) and add them to the milk along with the ginger powder (instead of fresh ginger). This gives you a drink you can “chew.”

How to Make Shir Khorma Thick (The “Majoon” Style)

If you want your drink to be as thick as the famous street-side “Majoon” shakes in Tehran, here are my professional tricks:

  • The Banana Hack: Freeze a banana for at least 2 hours. Add this frozen banana to the blender. It acts like ice cream but without the added sugar.

  • The Heat Reduction: Boil the milk and date mixture gently for 10 minutes on the stove. This evaporates the water content, naturally thickening the milk.

  • Nut Powder: Instead of whole nuts, grind your walnuts into a fine powder before adding. This thickens the liquid significantly.

Can You Store Shir Khorma?

Yes, you can store Shir Khorma, also known as Persian Date Milk, in the refrigerator for up to 24 hours.
Pour it into an airtight glass bottle or jar and keep it chilled.

Because this healthy Iranian drink is made with fresh milk, dates, walnuts, and ginger, it tastes best when served fresh.

If you prepare it ahead of time, shake the bottle well or blend it again for a few seconds before drinking, as the date and walnut particles may settle at the bottom.

FAQ

1. When is the best time to drink Date Milk?

To maximize benefits, drink it early in the morning on an empty stomach for memory and absorption. Alternatively, drink it 30 minutes before a workout for a sustained energy release that outperforms artificial pre-workouts.

2. Will this drink make me gain weight?

It depends on how you use it. This is a calorie-dense drink. It is excellent for healthy weight gain in children or underweight individuals. If you are trying to lose weight, stick to one small glass in the morning and skip the walnuts.

3. Can I make this if I am lactose intolerant?

Absolutely. I recommend using Almond Milk or Soy Milk. Almond milk pairs beautifully with dates and enhances the nutty flavor profile.

4. How do I stop the milk from causing bloating?

This is exactly why we add the ginger and cinnamon! These “warm” spices neutralize the bloating properties of milk and aid digestion. Never skip the spices if you have a sensitive stomach.

  1. I followed the metric weights and it was thicker than pudding at the end of blending. I had to use over double the milk to thin it to a drinking texture.

It was delicious but next time I will try the “The Exact Formula” near the top. I might use a bit more ginger as well. If it turns out thin enough I will try cooking it next time as well. It was good cold but I was hoping to try it hot. With how thick the first batch was I hesitant to mess with it more than adding the extra milk.

    • Hi dear Tiv! Thank you so much for trying the recipe and leaving such detailed and helpful feedback. I’m thrilled to hear that you found it delicious, even though it turned out thicker than expected! Sometimes differences in ingredients can affect the texture, but I will definitely double-check the metric measurements to make sure everything is accurate.

Doubling the milk was a perfect adjustment! Adding a bit more ginger also sounds like a fantastic idea, especially for a hot version. I really hope you give the hot version a try next time using “The Exact Formula”. Please let me know how it turns out. Happy blending/cooking! 😊
