In general, the Iranian and traditional pizza models are the same as other models in terms of the basic structure of pizza dough, sauce, and cheese. However, the significant difference is in the toppings placed on the pizza.

minced meat 350 grams
Pizza cheese 350 grams
Tomato 1 medium
Mushrooms 400 grams
onion a half

Tomato paste 3 tbsp
Sugar 2 tbsp
salt 1 tbsp
Thyme powder 1 tbsp
Liquid oil 1 tbsp
Water 1 cup

How to Make Persian Pizza: Step-by-Step

1. First, we wash and dry the mushrooms very well. Then we cut them into the desired shape and size. In the same way, we cut the tomato, bell pepper, and onion into slices.

2. Then we go to fry the minced meat. First, chop half of an onion and fry it with spices.
After the onion turns golden, add the minced meat to it.

Fry with the onions for 10 minutes and add the tomato paste.

3. Then I add 1/4 glass of water to the ingredients, put the lid on the pan, and let the ingredients cook together completely. After 15 minutes, the meat is ready.

4. The important point in this part is that we must pour the meat into a colander to remove the excess water and oil. This is because the excess oil and water make the pizza greasy and soft, which is not good.
5. Then we go to prepare the special sauce. Take a bowl, pour all the sauce’s ingredients into it, and stir for 5 minutes until they reach the right concentration.

Note that the sauce should not be diluted too much and should have the right consistency, as in the photo.

6. In the next step, we put Persian-style pizza dough on the bottom of the pizza pan. Then we pour the pizza sauce that we prepared in advance on the dough in an amount that covers the whole dough.

After that, it’s the turn of pizza cheese, and we pour about a handful of it into the dough.

7. At this stage, we spread the main ingredients of the Irani pizza, i.e., minced meat, on the dough. Pay attention to spreading the pizza ingredients evenly among the dough.

Because we want to eat the whole Persian pizza and not just the middle of the pizza.

8. Pour the mushrooms into the dough and spread them completely. I usually put the Irani pizza toppings half under the cheese and half on top of the cheese, but it’s up to you.

After the mushrooms and other ingredients, you can also put tomatoes and black olives of your choice on the pizza dough.

9. Then, in the last step, we spread the rest of the cheese evenly over all the dough and ingredients.

I sprinkle a little thyme and paprika on the pizza dough in this step. Both the shape of the pizza and the taste will be excellent.

10. Then I put the pizzas in the preheated microwave oven. Preheating the pizza oven makes the pizza cook better.

The temperature for my home oven is usually 180 degrees to 190 degrees Celsius. And I put the pizzas in the oven in two stages.

The first step is 8 minutes of cooking time, and for the next 8 minutes, I change the top and bottom pizzas so that the bottom and top of the pizza are cooked evenly.

11. After the cooking time is complete, I take the pizzas out of the oven and cut them into desired pieces. I also use ketchup with Iranian pizza.
