Ingredients:

Minced meat 1.1 pound
Large potato 2 pcs
Large onion 1 pc
Garlic 2 cloves
Big Tomato 3 pcs
Tomato paste 3 tablespoons
Brewed saffron as needed
Lemon juice as needed
Spices (salt, pepper, turmeric) as needed

Instruction:

1. Prepare the Onion Peel and wash the onion. Grate it using a fine grater. Crucial Tip: Squeeze the grated onion firmly to remove the excess juice. This prevents the kebab from falling apart or becoming too watery.

2. Add Garlic and Meat. Grate the garlic cloves and add them to the onion pulp. Then, add the minced meat (ensure it is fully thawed if frozen) to the bowl.

3. Season the Mixture. Add salt, black pepper, turmeric, and a pinch of sumac to the meat mixture. Knead the mixture thoroughly by hand for a few minutes until it becomes sticky and uniform.

1. Prepare 

To have a Persian pan kebab in the oven, you must prepare the ingredients in the same way as the first one. Turn on the oven while you rest the ingredients. Set the temperature to 482 Fahrenheit to heat up.

Take the kabab mixture out of the refrigerator. Grease the baking tray with oil or butter. Spread the kebab mixture completely on the bottom of the mold or tray, as in the second method, the diameter of the kebab is the same everywhere in the mold.

2. Place in the oven tray

Cut the tomatoes in half or cut them into rings. You can also use slices of potato and bell pepper. Arrange the tomatoes on the tray. Cover the mold with a thin aluminum sheet and put it in the oven. The oven temperature should be 482 Fahrenheit.

3. Cooking the kebab in the oven for 30 minutes

After 10 minutes, lower the oven temperature and set it to 356 Fahrenheit. The mold should remain in the oven for another 30 minutes.
