Faloodeh is an ancient Persian dessert, essentially a semi-frozen sorbet threaded with starch noodles and spiked with rose water and lime. While you might typically cook noodles until al dente, for Faloodeh, you need to cook them thoroughly before adding them to the syrup. This ensures they soak up enough liquid to become as crunchy as possible when frozen.

Faloodeh Shirazi and Bastani Sonnati (Persian ice cream) are inseparable. They are usually served together, and they taste best as a pair. This dessert, alongside white sekanjabin syrup and khakshir, is widely used in the summer to quench thirst.

Method 1: The Traditional Faloodeh Recipe

Ingredients :

Starch                     3.5 ounce
Lukewarm water   800 ml 
Water                      150 ml
Rose water               2 tablespoons
Sugar                     4.9 ounce

Instructions for Faloodeh Syrup:

  1. Pour the sugar and water into a pot and heat until it boils. Reduce the flame and let it simmer for 5 minutes until the syrup thickens slightly.
  2. Turn off the heat and transfer the syrup to a metal bowl. Add the rose water, then place it in the freezer for 4 hours. Every hour, take it out, mix it with a fork to break the ice, and return it to the freezer.

 

Instructions for Faloodeh Noodles:

  • Mix the starch with half of the lukewarm water and stir until smooth.
  • Pour the other half of the water into a pot and bring it to a boil. Add the starch mixture slowly and stir continuously until it solidifies.
  • Once the dough is cooked and gathers in the center of the pot, turn off the heat and beat the dough with a mixer for a few seconds.
  • While the dough is hot, pour it into a pastry bag with a fine-hole nozzle. Squeeze it into a bowl containing ice water. Tip: Keep the nozzle inside the cold water to help the noodles set immediately.
  • After the noodles are formed, remove them from the water, mix them with the frozen syrup, and return the mixture to the freezer until ready to serve.

Method 2: The Easy Way

Ingredients:

Starch               700 grams
Water                    one and a half liters

Syrup ingredients:

Sugar                 500 grams
Water                700 cc
Rose water           half a glass

Instructions:

  1. Mix the starch and water until combined. Pour into a pot over medium heat and stir regularly for 20-30 minutes until it forms a solid mass.
  2. Place the dough in a Faloodeh machine (or a clean meat grinder) and press it into a bowl of ice water. Once the noodles are ready, drain and rinse them in ice water until completely cold.
  3. To make the syrup, mix all ingredients. If you don’t have an ice cream maker, place a small bowl inside a larger bowl filled with ice and salt. Pour the syrup into the small bowl and whisk regularly until it reaches a slushy consistency.
