Khagineh or Iranian pancake is an excellent and complete fast food, in my opinion. Whenever we had food at home that I didn’t like, my mother quickly made Khagine for me. I loved baking these awesome pancakes.

Of course, I remember the month of Ramadan, when one of the fixed dishes for iftar was this Khagina. Today, I am here to explain that great and easy recipe to you, so stay with me until the end of the article.

What is Khagineh?

Khagineh, or Iranian sweet pancake, is one of those comforting homemade dishes that brings back memories of family kitchens and warm evenings. In many Iranian homes, especially during Ramadan, Khagineh is a familiar sight on the iftar table.

It’s quick to prepare, made with simple ingredients like eggs and flour, and finished with an aromatic saffron and rosewater syrup. In this guide, you’ll learn how to make authentic Khagineh Tabrizi step by step.

What Is Khagineh?

Khagineh (also spelled Khaigneh or Qiqanaq) is a traditional Iranian pancake made by mixing eggs, flour, and yogurt, then frying the batter in oil or butter.

In Tabriz and Zanjan, it’s a popular breakfast or dessert served with tea. The Tabrizi version is typically topped with fragrant syrup, while in Zanjan, sugar is added directly to the batter instead of using syrup.

Ingredients :

Egg 5 pcs
Flour 5 tablespoons
Sweet yogurt 5 tablespoons
Baking powder 1 tablespoon
Vanilla powder 1 tablespoon
Oil or butter as much as needed

Ingredients for syrup:

Water 1 glass
Sugar 1 glass
Rose water half a glass
Cardamom 4 pcs
Brewed saffron half a tablespoon

Instruction:

1. Crack the eggs into a large bowl and add the vanilla. Whisk until smooth and slightly frothy.

2. Add crushed cardamom pods and simmer until the syrup thickens slightly.

3. Heat a lightly oiled pan over medium heat. Pour the batter into the pan and spread evenly.

4. Cook until the bottom turns golden brown, then carefully flip and cook the other side.

5. Transfer to a plate and remove any excess oil using paper towels.

6. Pour cooled syrup evenly over the warm Khagineh before serving.

How to Prepare the Syrup

  1. Combine water and sugar in a saucepan and heat gently until the sugar dissolves.

  2. Add crushed cardamom pods and simmer until the syrup thickens slightly.

  3. Stir in rosewater and saffron during the final minutes.

  4. Let the syrup cool completely before pouring it over the Khagineh.

⚠️ For best texture, one should be warm and the other cool. This contrast helps the syrup absorb properly without making the pancake soggy.

How to prepare simple Khagineh for dinner

This Persian pancake can be used as a light main meal at night. For this, mix eggs and yogurt well. Then, slowly add flour and baking powder to this food mixture.

For your food to taste better and be more beautiful, use mint and chopped chives in its mixture. Fry the khagineh mixture in an oiled pan. Your Khagine is ready for dinner so easily and quickly.

  • You can shape the batter into small rounds, similar to kuku sabzi or kotlet.
  • Instead of syrup, some regions serve it with grape molasses.
  • A flame diffuser helps prevent burning.
  • It can also be baked at 338°F (170°C) until set.
  • The ratio of eggs, yogurt, and flour should always remain equal for best texture.
