How to Make Pashmak?

Instructions :

1. Fry the flour:

In the first step, make sure that the dishes you use are clean. Any moisture or impurities can cause the sugar mixture to stick and ruin the texture of the pashmak.

Toast the flour with oil in a pan over low heat until the raw smell disappears and the flour turns lightly golden. This usually takes about 15 minutes.

After the flour is ready, spread the toasted flour evenly on a large tray and set it aside. Then, move on to other ingredients.

2. Preparing the Sugar Syrup:

After toasting the flour, set it aside and start preparing the sugar syrup. Place the pot over medium-high heat until it boils. If you want saffron Cotton candy, add the brewed saffron at this stage.

After boiling the mixture of water, sugar, and saffron, add vinegar and stir with a clean and dry spoon after it thickens a little. It usually takes about 30 to 40 minutes for this mixture to thicken.

Note: To make sure that your nectar has reached the required consistency, drop a spoonful of the syrup into a bowl of ice water.

When the syrup cools slightly, stretch it with your hands and shape it into a thick ring.

Use the sieved and fried flour that you had sauteed before at this stage.

4. Prepare Iranian cotton candy:

In the last step, place the sugar ring into the toasted flour and gently stretch it from both sides. Repeat this several times.

Fold the ring into a figure‑eight shape and stretch it again. Place the sugar ring into the toasted flour and gently stretch it from both sides.

Repeat this process until the strands become very thin and resemble soft cotton. Usually, it is necessary to repeat this work 25 to 30 times until this sweet becomes the shape you want.
