Vavishka Recipe | Traditional Gilani Ground Beef Dish

Vavishka is one of those simple dishes that many families in northern Iran grew up eating. It’s made with minced meat, potatoes, tomatoes, and a mix of familiar Iranian spices.

Nothing complicated — just ingredients that are usually already in the kitchen. What makes it especially popular is how quickly it comes together. On days when there isn’t much time to cook, Vavishka can turn a few basic ingredients into a warm, satisfying meal.

Preparation time: 30 minutes

Cooking time: 45 minutes

Servings: 4

Ingredients :

Minced meat  8.8 ounce
Onions   2 medium
Potatoes 1 large
Tomato paste 1 tablespoon
Rice 3 cups
Black pepper 1 tsp
Salt 2 tsp
Turmeric powder 1 tbsp
Liquid oil        3 tbsp

How to Make Vavishka (Step-by-Step Recipe)

1. Sauté the onions

Start by heating the oil in a wide skillet. Add the onions and cook them over medium heat until they’re soft and translucent. You want them to reach a light golden color without burning, as this forms the flavor base of the dish.

2. Spices and Meat

Toss in the turmeric, salt, and pepper. After a quick stir, add the minced beef. Break the meat up with your spoon so it browns evenly. Keep the heat steady to prevent the meat from releasing too much moisture.

3. Add the Tomato Paste

Once the meat is browned, stir in the tomato paste. Sauté for a minute or two until the paste loses its raw smell and the oil turns a rich red color.

4. Simmering the Sauce

Pour in half a cup of water and turn the heat down. Let the sauce simmer uncovered. You’re looking for a thick, concentrated consistency where the oil starts to separate from the sauce.

5. Frying the Potatoes

While the meat is simmering, fry the cubed potatoes in a separate pan. Frying them separately is the secret to keeping them crispy. Once golden, set them aside on a paper towel.

6. Serving

Plate the meat and top it with the crispy potatoes. Serving it this way—rather than mixing them in—keeps the textures distinct.

    • Hello my dear friend
Basically, this vavishka should be prepared with minced meat
And the main taste of food is meat
But you can make it with chicken
Then you have to change the name of the food

    • You can use both types of meat to make vishka, but I suggest using both in a mix and half by half.
Because mutton has a lot of fat and shrinks quickly, it must be next to a lean meat like veal

  1. Thank you for explaining the Vavishka recipe very clearly and step by step
For this reason, I share with my family on social networks so that they can know better and more Iranian dishes that are so delicious and simple.

    • I am very happy that the way to prepare Vavishka was interesting for you, definitely do it and let me know the result.

  2. I’m a bit confused about when to add the potatoes in the Vavishka recipe — some versions fry them first then add them, others mix them in with the meat. In your version, should the potatoes go on top of the meat only at the end, or is there a benefit to combining them earlier so they soak up the sauce? Thanks MealsCook!

    • Great question — many people wonder the same thing!
In our MealsCook Vavishka recipe, the potatoes should be fried separately first until golden, and then added on top of the meat and sauce at the end of cooking.

The reason for this is that traditional Vavishka has two distinct textures: the soft, flavorful meat mixture at the bottom and the crisp fried potatoes on top. If you mix the potatoes in too early, they absorb too much oil and sauce and lose their crispness.

So yes — for the best result, fry them first, then add them as a topping right before serving. That’s what gives authentic Iranian Vavishka its perfect texture and layered taste
