Mustard powder 1/4 teaspoon, optional
Oil 1 teaspoon, if needed
Salt If needed, at the end of cooking

Instruction:

1) Slice and prepare the sausage

Cut the sausages into rounds or on a diagonal. Diagonal slices look better and give more surface area for browning.

Place a frying pan over medium heat. If your sausage has enough fat, add it to the pan without oil. If it is a bit dry, add only 1 teaspoon of oil.

Cook the sausage for 3 to 4 minutes until both sides are lightly golden and slightly crisp, and the fat and aroma are released.


2) Fry the tomato paste

Once the sausage is lightly browned, move it to one side of the pan. Add the tomato paste to the empty side and cook it for about 30 to 60 seconds until its color deepens and the raw taste is gone.

Then mix the tomato paste with the sausage so all the pieces are coated well.

Tip: If you want the mixture to be a little softer, add 1 to 2 tablespoons of water so the tomato paste blends more easily in the pan.


3) Add the spices and eggs

Crack the eggs into a bowl and add the black pepper, paprika, and mustard powder if using. Whisk just enough to break the yolks and combine them lightly with the whites.

Pour the eggs over the sausage and tomato paste.

Keep the heat on low to medium and let the eggs set gently.

If you like a smoother texture, stir once or twice gently.

If you want a more traditional, chunkier look, stir less so larger pieces of egg stay in the dish.


4) Final seasoning and serving

Once the egg whites are fully set and the eggs reach your preferred texture, the dish is ready. Taste it and add a little salt only if needed, because sausage is usually already salty.
