For: 2 people

Preparation time: 15 minutes

Cooking time: 30 to 45 minutes

Ingredients:

Lamb’s heart 0.5 piece
Sheep liver 0.5 piece
White liver 0.5 piece
Lamb’s kidney 0.5 piece
Onion 3 medium pieces
Liquid oil 2 tablespoons
Salt, turmeric, and black pepper as needed

Instruction:

1. Cleaning the heart and liver

First, clean the heart, liver, white liver, and lamb’s kidney carefully. To clean the heart, cut it in half with a sharp knife, remove the blood clots, and wash it thoroughly with water.

To clean the liver, remove the veins inside it and wash it well. For the kidney, cut it in half with a sharp knife, remove the veins inside, and wash it too. Then cut all of them into small pieces.

2. Cook white liver:

In the first step, place the cleaned white liver in a pot with a glass of water, some salt, and turmeric. Put it over low heat and let it cook slowly.

The reason for cooking the white liver first is that it takes longer to cook than the black liver and the heart.

3. Fry the onion:

Now peel and wash the onions, then chop them finely. Take a pot, add oil, and let it heat up. Then add the onions and fry them until they turn golden.

4. Add the white liver to the fried onion:

After the white liver is cooked, add it to the fried onions and sauté them until the color changes.

5. Adding heart and kidney:

Now add the cleaned and chopped heart and kidney to the fried onion and white liver. Then add tomato paste, salt, black pepper, and any spices you prefer. After that, add one cup of boiling water to the mixture.

6. Let it cook slowly:

Place the pot on low heat and let it cook slowly until the water is reduced. At this point, the food is ready.

You can transfer it to a serving dish and serve it. Depending on your taste, you can enjoy jaghoor baghoor with bread or rice.
