For: 4 people
Preparation time: 30 minutes
Cooking time: 2 hours
Ingredients :
| Green beans | 1.1 pound |
| Meat (beef, lamb, or chicken) | 1.1 pound |
| Tomato paste | 3 tablespoons |
| Liquid frying oil | as needed |
| Big onion | 1 piece |
| Garlic | 4 medium cloves |
| Lemon juice | A tablespoon |
| Turmeric, black pepper, and salt | as needed |
Instruction :
1. Before doing anything else, peel the onion and grate it using a coarse grater.
2. Pour the grated onion into a suitable pan and fry it in oil until its color starts to change slightly. At this stage, add some turmeric to the onion.
3. In the next step, peel the garlic and grate it using the same coarse grater. Then add the grated garlic to the fried onions and sauté it over medium-low heat. At this stage, add a little more turmeric and some black pepper.
4. After the garlic and onion have been sautéed well, it is time to add the meat, cut into appropriately sized pieces. It is better to cut the meat into pieces about the same size as the green beans.
5. After adding the meat, continue sautéing until its red color changes.
6. Now add a few cups of boiled water (4 to 6 cups) to the ingredients in the pot and let the meat cook well. If the meat is not fully cooked after the water has reduced, add 2 cups of cold water and allow it to continue simmering until tender.
7. When the meat is fully cooked, add the tomato paste.
8. Meanwhile, while the meat is cooking, wash the green beans and, after drying, cut them into 1-centimeter pieces.
9. Pour the chopped green beans into a pan and fry them in oil. Be careful not to over-fry the beans; it is enough to fry them until their color changes slightly.

However, there is one small difference. In the steps above, we mentioned that sliced and fried potatoes can be added on the side of the stew. But in this recipe, it is better to add the sliced potatoes at the very beginning, when frying the onions.
You can also add mushrooms to improve the flavor. Other ingredients can be adjusted according to taste. For example, you can use grated tomatoes instead of tomato paste. Grated tomatoes may even give the stew a better taste and a richer glaze than tomato paste.
